Do you ever not want to make a whole batch of cookies because you’re just craving one big cookie to yourself? Yeah… me too. I used to love those Lenny and Larry’s protein cookies and this recipe strongly reminds me of them. If you love Lenny and Larry’s cookies and don’t want to break the bank (or even if you haven’t tried them but a giant cookie is just calling your name) this is the recipe for you!

My dad bought vegan protein powder for us to share recently because he is dairy-free and I decided to use it to my advantage. I used the Orgain Chocolate Peanut Butter Cup protein, but if you don’t have this specific product or if you don’t want to use protein powder at all, see the substitutions below!

vegan, gluten-free, refined sugar free

Total Time: 20 minutes Makes: 1 cookie


4 tbsp. gluten-free oat flour

1 tbsp. creamy peanut butter

1 tbsp. maple syrup

1/4 tsp. cinnamon

1/4 tsp. baking powder

1 flax egg

1 tbsp. chocolate chips

1/2 scoop Orgain Chocolate Peanut Butter Cup protein power (about 2 tbsp.)


  1. Preheat oven to 350.
  2. Combine maple syrup, peanut butter, and flax egg in a bowl until smooth.
  3. Add the oat flour, protein powder, cinnamon, and baking powder and combine until a uniform dough forms.
  4. Fold in chocolate chips until evenly dispersed.
  5. Roll the dough into one large ball.
  6. Press down to flatten slightly on a parchment lined cookie sheet.
  7. Bake for about 12 minutes. Cool completely before enjoying!


Keep in mind that I have not tested any of the following substitutions so I can’t guarantee the same taste/texture as the original but I assume the following will work based on the nature of the ingredients. If you test a substitution and like the result please reach out and let me know!

Swap the oat flour for another gluten-free flour or all-purpose flour if you are not gluten free. I do not think this will affect the taste or texture significantly.

Swap the Orgain Chocolate Peanut Butter Cup protein for a vegan chocolate protein powder or a chocolate protein powder of your choice if not vegan. If you do not want to use any protein powder you can omit and use 1 extra tbsp. of oat flour plus a tbsp. of cacao powder.

Swap the peanut butter for any nut butter of your choice. This will of course change the taste but will still be delicious!
